Why Your Kitchen Team Keeps Repeating the Same Mistakes

Most owners treat kitchen staff training as something to do when there is time. In 26 years of kitchens I have seen that is exactly why the same mistakes return every month: wrong portions, wasted stock, slow service and dishes that taste different every shift.

Training does not fail because the staff are careless. It fails because it is done in the wrong order, and usually by the wrong person.

Why most kitchen training does not stick

  • The new cook is shown the work once, on the busiest day.
  • Nobody writes down what “correct” looks like, so every senior cook teaches a different version.
  • Training happens only when something goes wrong, never before.
  • There is no simple way to check whether the lesson was understood.

What good training protects

A trained team protects three things at once: your food cost, your guest experience and your own time. When the kitchen runs on clear standards instead of on one person’s memory, the owner stops being the bottleneck.

The part I keep for my clients

There is a short sequence I use to get a kitchen team consistent in weeks rather than months, and it starts well before any cook picks up a knife. It is also closely tied to your kitchen SOPs and your food cost control, and it works differently for a cloud kitchen than for a full restaurant.

If your team keeps repeating the same mistakes, talk to me and I will tell you where to start. You can also see how I work on the Services page.
